Cognac cocktails are a growing trend in cocktail bars worldwide. Cognac has a rich aromatic profile that is very fruity and floral, yet spicy, which lets you play with a variety of options on the ‘cocktail wheel’, revealing more of one particular aroma or another. It can easily replace other base ingredients in classic cocktails such as the Manhattan, Tom Collins, a mint julep or even a Mojito.
Cocktails such as the Sidecar, Sazerac – dry cocktails – are best enjoyed after dinner.
An Old Fashioned with XO is rich and full of flavor, and can be a perfect pairing with a dessert.

Typically served in a copper mug, the original was invented in New York’s Chatham Hotel during the forties.

– Rémy Martin VSOP Mature Cask Finish
– Lime juice
– Ginger beer
– Lime wheel

Pour 60ml Rémy Martin VSOP Mature Cask Finish and 15ml lime juice into a copper mug; add ice cubes and 120ml ginger beer. Stir to combine. Drop a lime wedge into the mug for a garnish.

Complex and extremely well-balanced, the first “de luxe” version was created at Ritz Paris in 1923, an icon of cognac cocktails with an enchanting story, said to have been named after a motorcycle sidecar owned by a gentleman in Paris, then popularized in London: truly a tale of two cities.

Shake 35ml Rémy Martin VSOP Mature Cask Finish with 15ml lemon juice and 30ml Cointreau with ice, then strain into your best coupe glass.

The perfect aperitif is created by pouring 50ml Rémy Martin VSOP Mature Cask Finish with 20ml lemon juice, 20ml maple syrup and a dash of orange bitters over cubed ice. Top with French cider and drop in a twist of orange zest.

Classic Cocktails Simple Mixers

Cointreau: The Original Margarita

The Original Margarita was the result of a chic socialite, Margarita Sames, mixing her favorite spirits together until she made the perfect drink while entertaining at home.  In 1948 in Acalpuco, Mexico, the Margarita was born, made with two of her favorites: Tequila & Cointreau.

– 3 cl Cointreau
– 5 cl Blanco Tequila
– 2 cl Fresh Lime Juice

Garnish a Margarita glass with a salt rim. In a shaker, pour the Cointreau, tequila and then fresh lime juice. Add ice and shake. Strain into your glass. Garnish your glass with a lime wheel.

Mount Gay Rhum: Old Fashioned

Crafted from the most exclusive reserves and produced in limited quantities, Mount Gay Rhum will satisfy the most demanding palates. The Old fashion cocktail is a great way of discovering the essence of Mount Gay rums.

– 1,5 cl XO
– 75 cl Dark Crème de Cacao
– 2 dashes of Orange Bitters
– 2 dashes of Angostura Bitters

Add all ingredients to mixing glass. Add ice and stir.
Strain over big cube into rocks glass. Garnish with expressed lemon peel.

Signature Cocktails

METAXA 7 STARS : Manhattan Bay

– 5 cl METAXA 7 Stars
– 2,5 cl Sweet Red Vermouth
– 3 Dashes of Orange Bitter
– 3 Dashes of Angostura

Frost the shaker and the glass beforehand.
Pour in the mixing glass 5 cl of METAXA 7 Stars, 2,5cl of red Vermouth, 3 dashes of orange bitter and 3 dashes of Angostura.
Stir with a bar spoon and filter through the glass. Add the garnish and serve.

The Botanist Gin: Wild Rose Sours

– 40ml The Botanist
– 20ml wild rose petal syrup
– 20ml lemon juice
– 20ml simple sugar syrup
– 20ml egg white

Pour ingredients into shaker and dry shake to mix. Add ice to shaker, then shake again to cool. Double strain into glass. Garnish with whole flower.
